Ingredients

  • 6 large eggs
  • 65 grams melted butter or ghee
  • 2 cups almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350; line loaf pan with parchment, overlapping sides
  2. Whip eggs for 1 minute; add melted butter and whip until fully incorporated
  3. Reduce speed to low; sift in remaining dry ingredients and stir to combine until completely incorporated and batter is thick
  4. Pour into prepared pan; spread with spatula
  5. Bake 40-45 minutes until golden; cool on wire rack for 10 minutes
  6. Remove from pan

Thermomix Instructions

  1. Preheat oven to 350; line loaf pan with parchment, overlapping sides
  2. Weigh dry ingredients into bowl on TM lid; set aside
  3. Place eggs for into TM mixing bowl; insert butterfly whisk and whisk for 1 minute at speed 4
  4. Add melted butter and whip until fully incorporated for 10 seconds at speed 3
  5. Sift in set aside dry ingredients as much as possible (about 1/8 of dry ingredients will sift into bowl); combine for 3 seconds on speed 3
  6. Place remaining dry ingredients into TM bowl; combine to fully incorporate for 5 seconds at speed 4 (repeat until smooth)
  7. Pour into prepared pan; spread with spatula
  8. Bake 40-45 minutes until golden; cool on wire rack for 10 minutes
  9. Remove from pan
