Quick Oven Roasted Potatoes

  • One kilo potatoes , halved if small, sliced 1/4 inch if large
  • 1/4 cup olive oil
  • 2 tablespoons salt
  • 2 teaspoons freshly ground pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon Vegeta


  1. Pre-heat oven to 500°F
  2. Cover a cookie sheet with parchment paper
  3. Place potatoes on cookie sheet, close together, (face up, if halved)
  4. Drizzle with olive oil (use only half if sliced)
  5. Sprinkle seasonings on top, distribute as evenly as possible, and save half for other side if sliced
  6. Roast for 20 minutes in top rack of oven; test for doneness and turn if sliced for 5 more minutes, or serve immediately if halved

A tablespoon or two of Herbs de Provence, rosemary, or any hardy herbs work beautifully with this recipe
